This is a modification of the classic Corsican Beef Stew with Macaroni.
CATEGORY: Meat Recipe Name: Corsican Beef Stew Ingredients: 1 lb mushrooms, sliced 2 red onions, sliced 6 clove garlic, crushed 2 lb beef, cubed 3 T olive oil 1/4 c butter 3/4 c red wine 1/8 t cinnamon 1 t rosemary 1 bay leaf 1 t salt 1 T peppercorns Steps: * cook onions with olive oil on medium heat until carmelized, stirring frequently *add all remaining ingredients except beef and bring to boil * add beef * cover and bake at 170 for 1 hour NOTES: You can use the cheapest beef available for this. The secret is to not overcook it at a high heat. |
