Here is a hearty hot bean dish that will definately fill empty stomaches! (Trust me--a large kettle of it filled the stomaches of an entire football team at a potluck; so much so, that the first year I brought it, the coaches didn't get so much as a single bean! The next year--on direct orders from the head coach--I made it again; only this time, the coaches went through the line first! I also doubled the recipe, and literally had only about 1 tsp. of the dish left!)
I had lost the original recipe called "Calico Beans", and was overjoyed many years later to taste the "4-Bean Hotdish" made by Kori. It was the same recipe!! Here is that recipe, with permission from Kori. Please enjoy! ________________________________________________ Calico Beans (Quick Version) 1 16-oz can Northern Beans* 1 16-oz can Butter/Lima Beans* 1 16-oz can Kidney Beans* 1 16-oz can Black-eyed Beans* 4-5 slices (or more to taste) thick sliced bacon, cut into pieces** 1 onion, diced*** 2 lb. hamburger, browned and drained**** 1/2 c. ketchup 1 T. prepared mustard 3/4 c. brown sugar Brown bacon, onion and hamburger together. Drain. Place in baking pot. Open and drain beans. Add to hamburger mixture. Add ketchup, mustard and brown sugar. Heat for 1 hour at 300 degrees. Longer Version & Substitutes *If desired, substitute 1/2 c. each dried beans for the canned. Soak overnight in water before completing the dish as printed above. **Can also substitute turkey bacon. ***Could substitute onion powder. ****To remove more grease, rinse under hot water when done cooking. Substituting ground turkey will also give a good flavor. You can use most any canned or dry bean combination to get slightly different flavors. Don't be afraid to try!! Enjoy! Sue & Kori |
