Sage Pesto Pork

This was inspired by my lovely husband. The key is to use proportionate amounts
of rub and meat, otherwise you risk overpowering the meat.

Sage Pesto Pork
Ingredients:

1 c olive oil
1/2 c peppercorns
1/2 c garlic
1/4 c kosher salt
1 c sage
Steps:

combine all ingredients in food processor and mix until an even paste is formed.

for steaks or chops coat sparingly and cook immediately or marinate for a few
hours

for roasts coat liberally and marinate 1 hour to 4 days in the refrigerator.

cook to desired doneness.
