Fruit Tartletts

Recipe Name:

fruit tartletts
Ingredients:

shortbread dough, I batch
16 oz cream cheese
zest of 1 lemon1/4 c raw sugar
fruit of choice
dark chocolate (if desired)
Steps:

* bake shortbread cookies in desired size, cool before removing from pan

* mix cream cheese, lemon zest and raw sugar

* pipe or spread cream cheese mixture onto cookies

* top cookies and cream cheese mixture with fruit

* grate dark chocolate on top if desired
NOTES:

I used these as bit size deserts. For the fruit I used half orange slices, half
figs and a single raspberry. The cookie and cream cheese mixture have enough
richness with only moderate sweetness so that less is more.
